The Macaroon Omnivore














One of the reasons why I'd love to live in Paris is that I could buy a pick-and-mix box of Laduree's macaroons and sit by the champs-elysee nibbling on them until I pass out. OF course, there's a whole list of reasons why I shouldn't, but that doesn't matter now lol

Over the past couple of weeks, I've hovered at least 3 boxes of Laduree macaroons, & I do not have the smallest shred of guilt. What do I say, I'm addicted that way *shrugs* -- I often carry a Tardis for a handbag, it would fit a whole studio apartment and ten piece orchestra, just in case! So my macaroon boxes were not so impossible to conceal in there. At work, you could say my macaroons are somewhat my I-Like-You-Meter, if I like you & think highly of you, you'll get a macaroon.. or at least an invitation to come & pick-up your macaroon du jour, ..if you don't get a macaroon-ah; it means you'll have to work harder ;p -- Of course.. my tit-for-tat bubble will burst the minute Laduree opens it shop in Dubai, which has been rumored to open in the first quarter of 2008

As it turns out, baking undeformed macaroons at home sits near to impossible *makes mental note: must enroll for macaroon baking classes this summer* -- I've been meta crawling the internet for good macaroon recipes that don't crack, I came across this that i'm soooo gonna experiment with, hopefully this weekend? & & these, which i'll try sooner, they seem effortless => ...and to address the cracking problem, I'll try to follow the advice from The Kitchen of Rose:
"Macaroons are very difficult to make at home. but I can give you one tip othat was given to me by a Swiss chef: after piping them, let them sit uncovered overnight before baking them. This helps to keep them from cracking, resulting in smooth tops. as Dorie Greenspan says in her delightful book Paris Sweets, each Parisian has his or her favorite place for macaroons. for this New Yorker its Laduree, but then, I have yet to do a thorough tasting investigation."
